Winter Days Mean Comfort Cozy Meals

Bruschetta, Italian style  is great anytime, but it is better in the summer when the tomatoes are in season. 

Serve Vegetable Quesadilla with salsa, sour cream, chopped tomatoes, guacamole and shredded chicken breast 

 You can make Italian Chick Pea (Ceci Bean) Salad a million different ways by putting anything you like in it, even pasta!

Lentil soup has a lot going on. I like it hearty, rustic Italian style and full of veggies so it’s not boring. You can  add small pasta like tubetini.

This is a basic Italian meatball recipe that my grandmother always made. She said if there wasn’t pork in it that it wouldn’t taste as good.
